Salmon Dinner

Tonight we ate delicious salmon with Asian-inspired sides:

  • tangy pineapple, tomato, and cucumber salad
  • sesame ginger soba noodles
  • seaweed salad

The salad was very simple: just cut up pineapple, cucumber, red pepper, tomato, and fresh herbs (I didn’t have cilantro, so I used scallions) and toss with a dressing of fish sauce, rice vinegar, soy sauce, sugar, garlic, and lime juice.

The noodles were easy as well! Boil soba noodles and then run under cold water to cool. Toss with a mix of fresh chopped ginger, sesame oil, veggie oil, rice vinegar, and soy sauce. Garnish with carrots, bean sprouts, scallions, and sesame seeds.

Enjoy with salmon pan-fried with salt/pepper and seaweed salad! (I wish I could say I made the seaweed salad, but it was pre-made from H-mart!) Very yummy and healthy summer meal!
