Carrot Spice Muffins

It’s time for fall things like apples and spices and warm baked goodies! I was looking around the Union Square Greenmarket the other day and was inspired by the fall-flavored breads. Here’s my latest creation: Carrot Spice Muffins! They’re super healthy, with no oil or butter, and made with wholesome oat and almond flours. Enjoy!


Carrot Spice Muffins

  • 1 cup oat flour
  • 1 cup almond meal
  • 1/4 cup all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 tsp ground ginger
  • 2 eggs
  • 1/2 cup brown sugar
  • 1/2 cup applesauce
  • 1/4 cup walnuts
  • 1 cup shredded carrot
  • 1/2 ripe banana

Combine flours with baking powder, salt, cinnamon, and ginger in one bowl. In another bowl, beat eggs, and mix with sugar, applesauce, and banana. Pour the wet ingredients into the flour mixture and gently mix. Fold in carrots and walnuts. Bake at 400 degrees for 25 minutes. Makes 8 medium-sized muffins.
