Simple Muffins

There are so many choices and flavors of muffins these days, that I can’t remember the last time I saw just a plain muffin in a bakery. Even searching for recipes, there are endless combinations of different flours, nuts, sugars, fruits, etc. Don’t get me wrong, I love muffins filled with extra goodies, but you can never go wrong with something simple.

The muffins I made tonight hit the spot. They were buttery, moist, and indulgent, with just a little sweet crispy bite on the top. Try them for when you want something simple.

Simple Muffin

adapted from Velvet Lava Cafe’s “French Muffin”

Dry ingredients:

  • 1 ¬†cup All purpose flour
  • 1/2 cup soy flour (you can use all purpose if you want)
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/4 tsp nutmeg

Wet ingredients:

  • 1/2 cup milk
  • 1 egg
  • 1/3 cup butter, melted

Topping:

  • 1/4 cup sugar
  • 1 tsp butter, melted
  • 1/2 tsp cinnamon
Combine the dry ingredients in one bowl and the wet ingredients in another. Mix together until just combined. Bake for 20-25 minutes at 350 degrees, or until edges turn golden. Let cool slightly, then spread butter over the top of each muffin and sprinkle cinnamon/sugar topping on while still warm. Enjoy!
